Happy Cinco de Mayo.  When I was working as a Speech-Language Pathologist in a school district, I would often times pick seasonal themes to work on listening comprehension and such…so I happen to know that Cinco de Mayo is a celebration of Mexico’s unlikely victory over the French at the Battle of Puebla, which was a huge, much needed, boost to their sense of patriotism and pride…just in case you didn’t know.  In celebration of our Mexican heritage (just kidding, we aren’t of hispanic descent), we are having a day of margaritas, mexican food, and best of all…

Margarita Cupcakes


I used the recipe from Brown Eyed Baker, with a little tweak to the frosting (i.e. more tequila, more sugar, more lime juice) to taste.  The cake is amazing…especially with the little bit of tequila soaked in.  The frosting…I am not even going to get into how much I wanted to eat it with a spoon.  You can smell the lime from across the room!  And the toppers…crepe paper rolled around toothpicks and cut into fringe.  Now we are ready!  Arriba!!!
