mini calzones {any way}

Once, or lots of times growing up, my mother would make a face and tell us how much she disliked wasting or throwing away food whenever she had to empty out the fridge.  The apple has not fallen far from the tree.  With the trip coming up, one of the things I have been trying to do is use up our food  without having to throw it away.

Now there are all kinds of ways to use up leftovers.  Say, reheat and eat?  But I like things a little more exciting than that.  Thus, we have calzones.


Mini calzones work nicely because the kids can pick them right up and eat like sandwiches.  Heck, I can pick them up and eat them like a sandwich.  And anything (well, almost anything) can go into them.

For ours we used up some kebabs we grilled a couple days before.  I separated the chicken from the steak, the veggies from the meat, and recombined them (along with some rainbow chard I had to use) into two separate types.


Steak with pepper and onion.


Chicken with swiss chard.


These work out nicely as a grab and go food while I am out running errands too.  Reheat, wrap in a napkin, and go.  Easy is good.  Using leftovers is good.  Calzones are really good.
