sunshine smoothie {mix it up}

I am going to say it right now. I don’t like winter. I don’t like being cold. I don’t love all of the layers I have to wear (I mean, I like layers, just not this many). I don’t like grey skies. Is it any surprise that I am not a fan of winter?
I was driving in my grey car under the grey sky early this week and thought, “Gee, I could use some sunshine!”. Short of up and moving to the Carribean, it wasn’t happening.  So I went home and got some of my sunshine in a glass!


I promise you, this smoothie will make you feel like you are sitting under blue skies on a sandy beach.  I promise.  Couldn’t we all use a beach right now?


Now, I used frozen ingredients…you can always use non-frozen and just up the ice.  Also, I originally had 1/4 cup Cream of Coconut, and although it gave the smoothie a yummy Piña Colada feeling, it was too sweet for me.  You may want to start with 2 tablespoons and add more as needed.  Lastly, I would add even more oranges for more citrus flavor!


Sunshine Smoothie
makes 2

1 cup vanilla soy (or almond) milk
1-6 ounce can pineapple juice
1 cup frozen pineapple chunks
1 frozen banana
3 Tablespoons Cream of Coconut (or Coco Lopez)
2 clementines (or one large orange) peeled
1 cup ice
orange slice, maraschino cherry, and flaked coconut, for garnish

Place all of your ingredients in a blender and blend. Pour into two glasses. Garnish with an orange slice, a cherry, and some coconut. Sip away and pretend you can hear the ocean.


I will be drinking this tasty concoction until spring.  It’s that good.  Enjoy!Signature_zpsbf29e5311

    Thanks for the receipe. I use mango juice instead of the orange but it was so good!
