#MakeIt Blogger Challenge: White Chocolate Raspberry Smoothie

It’s that time of the month again–I have #MakeIt Blogger Challenge post for you today with this month’s theme:  PINK!  It actually took me a while to dream this one up.  Ever since the baby was born (6 m0nths ago, already!), I have had some serious creative blockage and time management issues.  Go figure.  However, once the idea of pink drink came to me-specifically a creamy one that is healthful but delicious with its white-chocolate-raspberry goodness-I was back in my happy place.  As simple as it was, I just loved prepping, shooting, and writing this post.  In reminded me there is this happy-place called Circus berry just waiting for me…whenever I can get to it.  I was smiling all the way.

Anyhow, here is this month’s PINK feature–the White Chocolate Raspberry Smoothie.

I didn’t even tell my daughter what was in it-she just said, “Mmmm, I think I taste white chocolate chips in here!  My favorite!”  WIN!  That little girl sure does know what to say sometimes.

All you need is some vanilla greek yogurt, milk of your choice (I used unsweetened almond milk), frozen raspberries, and some white baking chocolate.  Oh, and some ice for texture.  If you want to garnish it to make it all pretty-like, go ahead and chop up some of that white chocolate and grab a couple of fresh raspberries.

Blend it all up and serve.

White Chocolate Raspberry Smoothie

Yield: 2 servings

Ingredients

  • 1 cup vanilla greek yogurt
  • 2 cups unsweetened almond milk
  • 1 cup frozen raspberries
  • 2 ounces good-quality white baking chocolate
  • 1 cup ice cubes

Instructions

  1. Combine all of the ingredients in a blender and blend until smooth. Garnish with chopped white chocolate and fresh raspberries.

ice cream sodas {mix it up}

It has been a long, long while since I have made and enjoyed one of the these treats.  When I was a little girl, my grandparents would make them all of the time for us and having them now is a little nostalgic to me.  Considering how simple this treat is, I wonder why I don’t spoil my kids with them more often.

This is everything cool, refreshing, easy, kid-friendly, and nostalgic you can ask for.  The kids helped me pick out their soda flavors and with a scoop of ice cream and a pour of soda, we had a fun and old-fashioned style beverage to enjoy.

I would make these again just to see the thrill in my little ones’ eyes.  For such a simple treat, they got so excited!  They loved watching the soda and cream foam up over the top of the glass as I poured, something that was my favorite part of the dessert as well.  There were lots of giggles…who knew?

mango chili smoothie {mix it up}

When Mr. and I went to Mexico last fall, we enjoyed many tasty, frozen concoctions including a mango chili margarita.  I have been wanting to recreate it ever since.  However, being that margaritas are not in my immediate future, I opted to fill the void with a smoothie-fied version of the drink.

You can make this as spicy as you want, just be careful because that chili kick sneaks up on you!

Mango Chili Smoothie
Makes 2

1 1/2 cup frozen mango chunks
1 banana, frozen or fresh
1/3 cup yogurt
1 cup milk
1 Tbsp honey
1/4-1/2 tsp ancho chili powder
1 cup ice (if using a fresh banana. Skip if using a frozen banana)

Blend all of your ingredients together until smooth. A word of caution: add your chili a little at a time, adding more to taste.

I used fresh banana and added ice, greek yogurt, unsweetened vanilla soy milk, and ancho chili powder.  You can use frozen banana (just skip the ice), any plain or vanilla yogurt, and the milk and chili powder of your choice.

cookies & cream hot cocoa {mix it up}

Are you still loving hot drinks? We are. I mean, how can you not when there is no end to this chilly, windy, wintery weather? We had some chocolate bars left over from Christmas in the pantry, so I dreamed up this tasty beverage.

Cookies-and-Cream-Hot-Cocoa

Candy bar hot chocolate. Better yet…cookies and cream hot chocolate. Mmmmmm.

Cookies & Cream Hot Cocoa
(makes about 4 servings)

about 8 ounces cookies & cream candy bar, chopped
4 cups milk of your choice
whipped cream and chocolate sauce (optional)

Heat milk in a saucepan over medium heat until steaming. Gently stir in chopped chocolate until melted. Continue to stir until cookie pieces break up a bit. Serve topped with whipped cream and a chocolate sauce drizzle.
